EASY PEASY BARS

I can't believe FALL IS HERE! The change in seasons is a great time to create new (and healthy) habits!

One of my go to recipes are these quick and easy fruit and nut bars. They are great for a snack on the go, or when your sweet tooth needs to be filled :)

 

INGREDIENTS:

  • 1 cup of nuts (i usually go with almonds, but you can use cashes or peanuts as well!)
  • I table spoon or so of coconut oil
  • 8-10 pitted mejdool dates (depending on the consistency of the bars, you can add more if needed)
  • 1 cup (or if using trader joe's fruit like I do, the whole bag!) of dried fruit 
    • blueberries, cherries, cranberries and apricots are available all year round and are super yummy!
  • 1/2-1 cup of water as needed (if it's not combining all the way)

OPTIONAL:

  • depending on the fruit, I sometimes like to add:
    • lemon zest with blueberries
    • Himalayan sea salt
    • cinnamon

GET IN MY BELLY:

  • throw everything in the food processor.
  • combine until sticky
  • pour into baking dish and let it sit for an hour or so
  • EAT IT

DISNEYLAND!

This past weekend David and I went to the happiest place on earth!

My first ride at Disneyland!

We were visiting one of David's best friends that lives in San Diego and decided that a trip to DisneyLand was a MUST (especially since I had never been before!).

We enjoyed a full day of laughter, sun and sugar! Here are a few moments from our trip:

Apple Cider Vinegar deliciousness

I've known about this wonderful/awful substance for years now, but haven't been able to commit to a regular practice of consuming it...because it is disgusting.

My friend and acupuncturist, Carie Martin, recommended it to me at our last session. *SHAMELESS PLUG FOR MY GIRL CARIE: http://www.collaborativecareseattle.org I was scared to try it to, but it changed my life. Just go. Do it.*

I am proud to say that I have stuck with it since then (and dragged my man into the practice also) and make it every morning. Here are a few reasons why I choke it down every am:

  • it has antibiotic properties: great for tummy problems
  • soothes a sore throat-germs can't handle the acidity of the vinegar
  • clears a stuffy nose-I need all the help I can get with this one!
  • The acetic acid within the ACV suppresses your appetite, increases your metabolism and reduces water retention
  • you can use it as a facial toner to help clear acne
  • boosts your energy by acting as a lactic acid antidote. The amino acids within ACV help combat the lactic acid buildup which is caused by stress and exercise.
  • regulates blood sugar levels

I mix a tablespoon (or so...it's usually first thing in the morning and my measuring skills are questionable) of ACV with a cup of water, squeeze half of a fresh lemon, a HEAPING tablespoon of local raw honey, and a dash of cayenne pepper.

This blend makes the ACV tolerable, plus you get the added benefits of honey/lemon and cayenne.
